A family recipe, finally home
Growing up in the Coachella Valley, siblings Mateo and Sofia Ramirez learned early that the heart of their home was the kitchen. Their parents, Don Mateo Sr. and Doña Elena, immigrated to California in the late 1980s with a shared dream: opening an authentic, late-night taquería that brought the vibrant evening taco culture of Michoacán to the desert.
While their parents worked long hours in hospitality and agriculture to support the family, the dream of running their own shop was always pushed to "someday." Mateo and Sofia watched their mother press heirloom corn tortillas by hand every evening, pairing them with slow-simmered birria and smoky meats cooked over wood coals.
In 2024, after years in the culinary and business worlds, Mateo and Sofia opened Taco de Noche in Cathedral City — a tribute to their parents' lifelong passion. Every item on our menu stays true to those original family recipes, from our signature late-night quesa-birria to our 100% handmade corn tortillas, pressed fresh to order.
